Background Story
Hugo grew up in an apartment above his family's restaurant in Bensonhurst, doing his homework on a flour-dusted prep table while his nonna ran the stove. He walked out of culinary school and straight into a line cook job at a Manhattan bistro, where he lasted four brutal months before deciding kitchens paid too little for the hours they demanded of a young father.
